Finally, I created a task to synchronize each table in the entire database and found that other tables could be synchronized. However, there was one table that could not be synchronized. The error is as above. I feel like the data has come through, but the 6.1.0 version did not write the data into the database. I manually extracted the data and used REPLACE INTO, which worked. Very strange. The table structures on both sides are consistent. I backed up the source database.

After the final test, I created an identical table on the target end separately, and then synchronization allowed the data to be stored. Using backup and restore would result in an error and synchronization failure. I encountered a similar issue in version 4.0.9 before. I hope my testing can help others. Ultimately, the problem was due to the source end not enabling the new character set template, while the target end had it enabled, causing data to fail to write due to character set issues.
